The kitchen
Restaurant Dhima occupies the ground floor and the terrace in front of it. Greek and Italian, a great deal of seafood, and a copper-domed pizza oven at the back.

What comes out of it
Some of what the kitchen sends out: seafood off the grill and out of the pan, pasta and risotto, pizza from the copper oven, and a few things that are not on any list. What is cooking on the night changes with the season and the catch, so ask at the table.

Sea bream, whole and grilled
Off the grill with charred aubergine, peppers and a wedge of lemon

Ceviche
Raw white fish cut small, citrus, and a slick of pepper oil around the bowl

Frutti di mare
Mussels, squid, whole prawns and crab claws through ribbon pasta, with cherry tomato

A whole burrata over dressed rocket, tomatoes and sliced peach

Croquettes from the fryer
Six of them, crisp, on a herbed white dip under a green oil

Kataifi parcels
Wrapped in shredded pastry, fried, under a yellow sauce

Pizza from the copper oven
Ham, mozzarella, rocket and halved cherry tomato

Panna cotta
Two, with orange, a walnut half and a dark syrup

The room is a terrace
It fills up, and it turns over fast
The dining room is the covered terrace under the building, open on three sides to the coast road and the sea beyond it. It seats a lot of people, and the kitchen is built to turn them over — food arrives quickly even on a full August evening.

Breakfast, included
Included with every room and laid out downstairs from early. Juice, eggs, cheese, an omelette and a crêpe with chocolate, and coffee at the table.

The bar and the coffee
There is a proper back bar and a coffee house on site, so the espresso and the cocktails come off the same counter.

The pizzeria half
The sign has said Restaurant – Pizzeria for as long as it has hung there, and the copper dome of the oven stands at the back of the kitchen.
